Cheesecake shots

Ummmm...Cheesecake! I don't really know what to call these since they are in cute, tiny, little votives. So any good ideas besides shots would be great! Anyway, Ben and I ate at PF Changs a few weeks ago and their desserts inspired me. They put them all in little shot glasses and my mind was just rolling with ideas. My first try was with cheesecake. I made a graham cracker crust and a no bake cheesecake and just layered it. It was just the right amount of dessert.
Cheesecake Shots

Crust:
1 1/2 c. graham crackers, finely crushed
1/3 c. margarine or butter, melted
3 TBS sugar

Heat oven to 350 degrees. Mix crumbs margarine, and sugar. Press firmly against bottom and sides of pie pan. Bake about 10 minutes or until light brown. Cool.

Filling:
8 oz. cream cheese, softened
1 c. powdered sugar
1 tsp. vanilla
1 c. cool whip

Blend everything together, BUT fold in cool whip.
Now for the layering: Add some crust on the bottom of your shot glass or votive candle holder, then about 1-1 1/2 TBS cream cheese layer, crust, cream cheese. Top with your choice of filling (cherries, blueberries, toffee crunch...). Makes 5 Shots. Enjoy!

What a great idea! Great if you just want a little bit of dessert! But with something that yummy, could you really stop yourself from having just one?!

I've decided I want to come live with you....you always are posting about some YUMMY food! No wonder your boys love you so much! :) I booked my flight for Curt's wedding the other day...it will be fun to see you there!
