4 Layered Yumminess

I went to a friends baby shower and this was served there. Of course when I taste something amazing I search for the creator:) My friend Natassia Saterthwaite made this and gave me the recipe. There were several others who wanted it and I said I would post it. So, here it is...


4 Layered Yumminess

Layer 1: Chocolate Cake
1 Devils Food Chocolate Cake Mix
Make according to directions, but pour only half the batter in a 9x13 greased pan. Bake at 350 for 15 minutes. Use the rest of the batter to make cupcakes;)

Layer 2: Cream Cheese Filling
8 oz. cream cheese
1 c. powdered sugar
8 oz. cool whip
Mix cream cheese and powdered sugar together until combined. Fold in cool whip until combined. Put on top of chocolate cake once it has cooled.

Layer 3: Pudding Filling
2 small boxes INSTANT chocolate pudding
3 c. milk
Whisk the pudding and milk for 2 minutes and then pour on top of the cream cheese filling.

Layer 4: Cool Whip
8 oz. Cool Whip**
Put cool whip on top of the pudding...if you want to get fancy, top that off with some chocolate shavings.

**Buy the big Cool Whip and split it up between the Cream Cheese Layer and the 4th Layer.

Hooded Towel

So I'm back from my long break of no blogging...it was not by choice, just so you know. Our hard drive fried. Yup...I lost all my pictures from June until now. So basically I lost ALL of Connors pictures:( Thank goodness for my blog and that I put a ton of pics of him on here. Our computer is finally up and running and hopefully I didn't loose all 5 of my fans who read my blog!!


These are not your typical hooded towel! I saw a tutorial (from Crap I've Made blog) on these and HAD to make them. I have a friend who is expected twins! One boy and one girl. Found some cute fabric that would work for both and voila...towels and matching wash cloths. These took me forever to make. The stupid terry cloth was so not working for me. That stuff stretches beyond belief! Oh well. They turned out cute, thats all that matters, right?

Anyway, I hope you like them and maybe you can make one too, if your up to a fun project!

Caramel Popcorn

This popcorn always brings back some good memories when I was a little one. I remember eating it every Sunday night while watching the Disney movie they used to do back in the day with that Michael something or rather. Good times. Well, this Friday night we had a Family Fun Night and ate some Pizza Pretzels, watched Pink Panter 2 and ate this yummy stuff. Hope you enjoy!


Caramel Corn

Pop:
2 bags microwave popcorn, I used lite butter

Boil for 1 minute:
1 c. brown sugar
1/2 c. karo syrup
1 stick butter or margarine

Pour over popcorn and eat up!

Beaded Necklace

I know...SO CUTE! Well, lucky for us...SO EASY! While all the men went to the BYU game (see following posts), us ladies (my mom, Whitney and Katie) got our craft on and made these necklaces and some button earings to match. We got the cute fabric at a darling fabric store called Cabbage Rose and we got some cute Amy Butler Fabric. We covered some wooden beads with Modge Podge threaded it with some white ribbon and voila....Cuteness. If you look at the blessing picture, on the next post you can see me wear this darling necklace and see how it will go with everything you own. If you don't feel like making one, my sis-in-law, Whitney, will hook you up, she is selling them.

Connors Blessing

We blessed Connor this last Sunday, Sept. 6. We had so many family members who were able to make it...so great. Here is our little family...we had so many people we didn't get a big group one. Here is who was in on the blessing:

Ben, my Dad, Ben's Dad, Eric, Curt, Jon, Chris, Phil, Kelly Lancaster, Bishop Crook, and Logan got to hold the mic. It was a very special day for us. We love getting together with all of our family! So much fun!

After Sacrament mtg. the whole clan...all 26 of us, went to our house and we had lunch for everyone. 2 Roasts (for French Dip Sandwiches), 12 chicken breasts shredded (for a yummy BBQ chicken), 26 baked potatoes, fruit salad, salad, 2 pecan pies, 4 dz. Raspberry Almond Thumbprint Cookies, Texas Sheet Cake, 4 cases of drinks, 24 waters. What was left??? About 1/2 sandwich worth of chicken, 3 baked potatoes, a little bit of salad, some Texas sheet cake, and about 6 drinks. Thats it. Perfect amount of food! What a relief! Thanks to all the family who helped and brought some food! And thanks for making the trip to Cow Town for this special day!

Happy Boy!

Connor has been so happy and smiley and I was dying to get pics of him! He is pretty much done with the whole colicky thing...thank goodness! He is totally sleeping through the night and just a good sweet baby. Now, I wish he would just take a bottle or a binky...life would be great! He is super stubborn with that business!

Bajio Chicken

Horrible picture...yes, Best Crock-pot meal EVER...Absolutely! This has to be my new favorite meal. It made tons for our family so we had tacos one night and quesadillas the next. Seriously, it is amazing! I used corn tortillas with black beans, the chicken, cheese, sour cream. It would be great with avacados, on a salad...the list goes on:) This came from Real Mom Kitchen.
Bajio Chicken

5 chicken breasts
1/2 cup salsa
1 Tbsp cumin
1/2 cup brown sugar (more to taste, I added at least an extra 1/8 cup)
1 4 oz. can diced green chilies
6 oz. Sprite (1/2 can)

Combine all ingredients in a crock pot. Cook on low for 5-6 hours. Remove chicken and shred. Return to crock pot and cook 1 more hour. Thicken the juices with a little cornstarch mixed in water.
Serve with flour tortillas, lettuce, cheese, black beans and any other taco fixings.
If you want it spicier rather than sweeter add a hotter salsa and more green chilies.

BYU vs. OU

I had tons of family in town this last weekend for several reasons 1. Connors blessing and 2. the men going to this game. They were lucky to get to go! Quite the ordeal to get tickets! They got to go to the NEW Cowboys stadium. I didn't get to go, but the pictures look amazing! Check out the screen! Holy cow! The guys who went: Ben, Curt, Eric, my Dad, Ben's Dad, Logan, Jon, and Phil.
So, it looks like BYU fans were quite the minority...look at all that red!

Facebook

Sorry I haven't posted much...I have tons to add but I got a little distracted on Facebook...just opened an account and have had fun checking things out.


Funny story and an apology...So when I signed up I guess I hit a "confirm" button at a really BAD time. I told Facebook to send out an invite to EVERY single person I have EVER emailed! How embarassing! I start thinking about who I sent it to and it makes me want to hurl. People like: interior design clients, kids teachers, church leaders, etc...Whats even worse is Caden's current teacher sent me an email saying: Sorry Summer, I don't have a facebook account but thanks for the invite!. How embarassing! So, for all those people out there who got an invite from me and you haven't spoken to me in years and don't care to know me...sorry you got an invite from me and sorry to give you SPAM!

Please tell me some of you have done this! Anyone??

WOW!! That is Bad!

I went to pick up Caden from school and when we were going inside the house he looked at me and says:

C: Wow Mom...you look like a Dork!
M: What? What's wrong with what I am wearing?
C: I mean, come on, you are wearing pink pants and an old ugly shirt...it doesn't even match.
M: Gasp!!!

OK...in fairness...I have yet to take a shower (I have been cleaning all day getting ready for company), my hair looks rediculous, I have no makup on, I am wearing pink sweat pants and an old Lacrosse t-shirt that is WAY too big. I really do look like a dork. Thanks for pointing it out Caden. I really appreciate it:) At least he was laughing at me and not too embarressed...that would be horrible!

1st Day of Pre-School

Noah started pre-school on Monday! He loves his teacher, Ms. Kelly and met lots of new friends. Here's to a great year! Mom is going to enjoy the time with just Connor, 3 days a week:)

Cuteness

This was for Noah's teacher...I think they turned out cute! My new favorite thing is rub-ons. They truely are the greates thing ever!

Go Screaming Fleas Go!!

Noah had his first soccer game on Saturday! His team is called the Screaming Fleas...yeah I know...random. He has been looking forward to this day since we signed him up for soccer. I think it is hilarious to watch a very first soccer game. They have no clue what they are doing and they just kind of run around the ball. Too scared to take it from the other kid. He is #6. Look at that kick!

Way to go Noah! You did a good job buddy!

2 mo. old!

Little man Connor is now 2 months old! My how time flies by! He is smiling and cooing up a storm! He is very serious when he is talking to us...it's like he has something important to tell us. Here are his stats:

Weight: 11 lbs. 2 1/2 oz. (50% )
Height: 23 " (50%)
Head: 15 1/8" (25 %)

Cinnamon Sugar Donut Muffins

Just made these on Saturday...so good! I think its because you dip them in melted butter and then in cinnamon and sugar! Noah was helping me make these and we had them in the oven for about 2 seconds when I realized we for got to add brown sugar. I had to take them out and dump them back in the bowl to add the brown sugar...yeah...huge mistake! At least I didn't cook them yet:)
Cinnamon Sugar Donut Muffins

Batter:
2 cups flour
1 Tbsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp cinnamon
2 large eggs
1 cup plain yogurt (I used low-fat plain yogurt)
2/3 cup packed brown sugar
4 to 8 tbsp oil ( I used 4 tbsp oil)
1 tsp vanilla

Topping:
1/2 stick butter, melted
1/4 cup sugar
½ tsp cinnamon

Position oven rack in the middle position and preheat oven to 400 degrees. Line a standard muffin pan with paper cups. Whisk flour, baking powder, baking soda, salt and cinnamon in a large bowl. In a separate bowl, whisk together eggs, yogurt, sugar, oil, and vanilla. Add flour mixture and mix with light strokes until the dry ingredients are just moistened. Don't over mix; batter should not be smooth. Divide batter among the muffin cups and bake until a toothpick inserted in one or two of the muffins come out clean, 12-15 minutes. While the muffins are baking, melt 1/2 stick butter and place in a bowl just large enough to hold a muffin. Combine sugar and cinnamon in a small, shallow bowl. As soon as the muffins are done, dip them one at a time in the melted butter and then roll in the sugar mixture. Set on a rack to cool.

Mr. Creative

So what could a 4 year old possibly do with all these toys? Any guesses?
Why play golf of course! This is what he is up to when Caden is at school. He wanted to play golf and we didn't have golf clubs, so...he used the screw as the "tee", the screw driver and hammer were used to get the screw in the ground, head light and goggles were for looks, the croquet club thing was the golf club and the blue piece of paper on his upper lip is the mustache he glued to his face.

Fort Worth Cats...

The Saturday before school started we went to a Fort Worth Cats Baseball game. We had so much fun. The boys love going to these game, mostly to see....
Dodger the Cat. They are obsessed with this cat. Too bad they didn't get to meet him this time!

When the game is over they always let kids run the bases...so much fun! You can barely see the boys...Noah in the orange shirt and Caden in front of him.
