Cupcake Pops


Many of you know that I have an obsession with cake. I love everything about it! Especially cupcakes. Then several months ago I discovered Cake Balls. Even better...you get about 2-3 bites of deliciousness and you are good to go...they are so rich and covered in chocolate! So I went to Bakerella's blog and she took the Cake Ball to a whole 'nother level! I have been dying to make these adorable little cupcake balls. Try them, you won't be disappointed!


I really need to practice food photography! These pictures don't give these little guys any justice!
I used Chocolate Fudge cake (bake like directions say and then crumble it up). Then get a tub of frosting or make 2 c. of your own and mix the cake crumbles and frosting together. From there you can get the specifics here on Bakerella's blog. If you haven't been there before...beware, she is very talented and you will want to make everything!

We've Been FLaMiNgOeD!!

Yes...you read it right! We got Flamingoed! Our ward activities committee arraigned this fun activity where someone does a random act of kindness for you and they put flamingos in your yard...then you get to flamingo someone else! The kids thought it was the coolest thing ever! We got some amazing Chocolate Chip Crunch Cookies! So good! Our Flamingos...aren't they cute??
Noah loved them...he really wanted to sit on them.

I Spy with My Little Eye...

The last couple of days our house has been a hang out for some animals.Do you spy the creature here?

This is our little bird that has decided to make its home on our meter box. Odd place I must say. We have had fun checking its progress from having no babies to 2 cute little babies. They took off today and we haven't seen them yet. So I'm guessing the little ones learned to fly! Ben did not have fun mowing the lawn and weed eating...the mama bird was glaring at him...so in that little section of lawn it is really overgrown. Glad we can mow it now!
And the cat. For some reason this cat has made a little bed in our bushes. It is there sleeping all day long. It must like the shade. The boys love this cat for some reason (I'm deathly allergic to cats if they touch me...so I'm not a fan of them. So if you have a cat and I steer away from it, you know why.)

Water SLIDE!!!

Around May 6 (give or take a few days...I'm way behind on the blogging!) I was over at my good friend, Sharla P. Wilde, house and they have this amazing water slide in their backyard. So they were all having so much fun! Here is Caden...he is totally in the air!

Where Did That Come From?

Since I am using my blog as a family journal as well as other things, I wanted to remember the conversation I had with Caden last week:

C: "Mom, I know what we are going to name the baby!"
M: "What are we going to name the baby?"
C: " We are going to name her Katelyn"
M: "Whose baby is this?"
C: "My baby sister, and we are going to bring her home tomorrow!"

So, apparently I should have a baby girl in my arms right now...but I don't. I'm just hoping he knows something I don't and that I will be getting a baby girl. If I get a girl, I will take it as a sign and think about the name Katelyn!

And NO, this is not an announcement...I am NOT PREGO! So do not ask! The boys just keep asking me 24-7 when they are getting baby sister...that is all!

Graduation Day!


Yesterday my 5 year old GRADUATED from pre-school! There were lots of emotions that day! I can't believe I will have a Kidergartner next school year! Now grant it, it is only from 8am-11am (how horrible is that? He is going to be so bored, esp. because all of his friends will be in full day...ours is the only district in our ward with half day...) but, it still feels wierd...when was I old enough for a 5 year old? Time flies by way too quickly!


At his cute little program, Caden led everyone in the pledge of alligance. He did a great job, even if he did just wave the flag around and didn't say a word.

Here are all the kids in his class quoting Bible verses. They know one for every letter of the alphabet...yes, he knows 26 Bible verses...thats 26 more than me!

His cute teacher, Mrs. Susanne is reading a sweet book called, "I Knew You Could".


This is Caden getting his "diploma" which included his certificate and some sweetarts because she said he was such a sweet boy and included everyone in everything. He was always polite...That's my boy!

Cheesecake Pops!

For those of you who have heard of Daring Bakers , this was last months challenge and they looked so good that I had to try them. I think I am going to sign up to do their monthly bake off. I had a blast making these, not to mention that it was the BEST cheesecake I have ever tasted. I couldn't stop eating it!
There are so many options you could do for the dipping:
chocolate/white chocolate dipped in crushed oreo
chocolate dipped in crushed reeses pieces
chocolate dipped in toffee (which is what I did, AMAZING!!)
chocolate with sprinkles
chocolate dipped in mini chocolate chips
Just a few I thought would taste yummy! If you want to impress people (except my good friend Sharla b/c she hates cream cheese) than these would be a great choice. They are really good frozen. The recipe came from Sticky, Chewy, Messy, Gooey by Jill O'Connors. I think I may be going to Barnes and Noble tomorrow to buy this book...I can only imagine how good everything else might taste!


Cheesecake Pops

5 8-oz. packages cream cheese at room temperature
2 cups sugar
¼ cup all-purpose flour
¼ teaspoon salt
5 large eggs
2 egg yolks
2 teaspoons pure vanilla extract
¼ cup heavy cream
Boiling water as needed
Thirty to forty 8-inch lollipop sticks

1 pound chocolate, finely chopped – you can use all one kind or half and half of dark, milk, or white (Alternately, you can use 1 pound of flavored coatings, also known as summer coating, confectionary coating or wafer chocolate – candy supply stores carry colors, as well as the three kinds of chocolate.)

2 tablespoons vegetable shortening
(Note: White chocolate is harder to use this way, but not impossible)
Assorted decorations such as chopped nuts, colored jimmies, crushed peppermints, mini chocolate chips, sanding sugars, degrees) - Optional

1. Position oven rack in the middle of the oven and preheat to 325 degrees F. Set some water to boil.
In a large bowl, beat together the cream cheese, sugar, flour, and salt until smooth. If using a mixer, mix on low speed. Add the whole eggs and the egg yolks, one at a time, beating well (but still at low speed) after each addition. Beat in the vanilla and cream.

2. Grease a 10-inch cake pan (not a springform pan), and pour the batter into the cake pan. Place the pan in a larger roasting pan. Fill the roasting pan with the boiling water until it reaches halfway up the sides of the cake pan. Bake until the cheesecake is firm and slightly golden on top, 35 to 45 minutes.

3. Remove the cheesecake from the water bath and cool to room temperature. Cover the cheesecake with plastic wrap and refrigerate until very cold, at least 3 hours or up to overnight.

4. When the cheesecake is cold and very firm, scoop the cheesecake into 2-ounce balls and place on a parchment paper-lined baking sheet. Carefully insert a lollipop stick into each cheesecake ball. Freeze the cheesecake pops, uncovered, until very hard, at least 1 – 2 hours.

5. When the cheesecake pops are frozen and ready for dipping, prepare the chocolate. In the top of a double boiler, set over simmering water, or in a heatproof bowl set over a pot of simmering water, heat half the chocolate and half the shortening, stirring often, until chocolate is melted and chocolate and shortening are combined. Stir until completely smooth. Do not heat the chocolate too much or your chocolate will lose it’s shine after it has dried. Save the rest of the chocolate and shortening for later dipping, or use another type of chocolate for variety. Alternately, you can microwave the same amount of chocolate coating pieces on high at 30 second intervals, stirring until smooth.

6. Quickly dip a frozen cheesecake pop in the melted chocolate, swirling quickly to coat it completely. Shake off any excess into the melted chocolate. If you like, you can now roll the pops quickly in optional decorations. You can also drizzle them with a contrasting color of melted chocolate (dark chocolate drizzled over milk chocolate or white chocolate over dark chocolate, etc.) Place the pop on a clean parchment paper-lined baking sheet to set. Repeat with remaining pops, melting more chocolate and shortening (or confectionary chocolate pieces) as needed. Refrigerate the pops for up to 24 hours, until ready to serve.

Bran Muffins

So I am going to be completely honest...I did not think that these muffins sounded very good when my friend Emily emailed the recipe to me. They sounded really fibery and super dry. I was so glad to see that I was proven WRONG! These are amazing and they are so incredibly healthy. (Now I'm not going to lie to you...I may have doused it in butter...but I do that regardless of what kind of muffin it is! It is good with or without butter.) My kids loved them and you get full after eating just one. It was by no means dry...surprisingly very moist. For those of you who know my dad...he even liked them and that is saying something!! (Love you Dad!) If you don't know where to get the ingredients...Kroger, HEB etc...in the healthy isle.
Bran Muffins

1 c. whole wheat flour
1 c. raw wheat germ (not the toasted kind in the bottle)
2-3/4 c. wheat bran
2/3 c. oat bran or 3/4 c. rolled oats (I used the oats)
2 tsp. baking powder
2 tsp. baking soda
2 tsp. ginger or cinnamon (I used cinnamon and added a bit more)

3 TBS oil
2/3 c. honey
2-1/4 c. milk or vanilla/plain yogurt (I did 1 c. milk 1-1/4 c. vanilla yogurt)
2 eggs
1/2 c. raisins or chocolate chips (opt.) (I did half with raisins half plain...I liked the plain)

Combine the dry ingredients in one bowl and mix them well. In another bowl beat the eggs and then add the rest of the wet ingredients with the optional raisins coming last, and mix well as each new ingredient is added. Fold the wet into the dry, mixing only enough to moisten the dry ingredients thoroughly. (Best if you mix by hand, otherwise you will overmix).
Put the mixture into a greased muffin tin and bake at 350 degrees for 20-25 minutes.

Happy Birthday To Me!!

My birthday was on May 3, a little late on the post. But I still had to post about the most wonderful day the world ever saw...I was born!!! My DH had to leave on a business trip on May 2 and comes back on May 10. So, he is missing my b-day as well as our 8 year Anniversary
(Happy Anniversary! I love you babe!)...so instead of feeling sorry for myself and being alone, I decided to do the next best thing. Head on over to Houston and be with my parents! What a great idea it was!

My wonderful day (a brief background on my b-day... Apparently when I was younger I used the "birthday card" for like a month or so...So "they" say. I may have said, "I get the front seat, it's my birthday, or I get this...b/c it's my birthday...you get the idea. So now my family makes fun of me all the time. I will have you know that I no longer do that. I have one day and one day only...I may use it for all it's worth though!!) Anyway...my day started with my mom, dad, Noah and Caden coming into my room singing Happy Birthday and brought me a plate of donuts with a candle. (side note...I have donuts for every birthday...tradition). Then we went out on the jet ski. This was Caden's first time going...he loved it! He kept telling me to go faster and to do more tricks. I only know how to do donuts, but he was still impressed!

The boys had fun playing in the nasty lake water. They were throwing "sand" at each other, when we got home there was sand in all sorts of places...

I know all my brothers are totally rolling their eyes right now. But they know whats up:) while my awesome dad watched the boys. We went shopping and then went home and swam in their pool.Next on the list...my birthday cake. It was so yummy! Thanks mom! Of course the boys helped me blow out the candles...there are just getting to be tooooo many! Dad and Mom...thanks for giving us a great time! We didn't want to leave! Love you tons!

Birthday Cake

Fudge Ribbon Cake

For my birthday my mom made me this yummy cake. I used to eat this all the time and had totally forgotten it! It is a recipe from my Dad's mom. She is an amazing baker/chef. So, this brought back a lot of memories! Thought I would share the recipe! Look how pretty it looks! I love the cream cheese swirl.

Fudge Ribbon Cake

1 (8 oz.) pkg. cream cheese
2 TBS margarine
2 1/4 c. sugar
1 TBS corn starch
2 eggs
4 Envelopes Nestles Choco Bake
1/2 tsp. soda
2 TBS plus 1 1/3 c. milk
1 1/2 tsp. vanilla
2 c. flour
1 tsp. salt
1/2 c. margarine
1 tsp baking powder

Preheat oven to 350 degrees. Grease and flour 9x13 pan.Cream 2 TBS margarine with cream cheese, 1/4 c. sugar, corn starch, add 1 egg, 2 TBS milk, 1/2 tsp. vanilla. Beat at high speed until creamy. Set aside. Combine flour with 2 c. sugar, baking powder, salt and soda in large bowl. Add 1/2 c. margarine, 1 c. milk and beat for one minute. Add 1/3 c. milk, 2 eggs, choco bake and 1 tsp. vanilla. Beat. Spread 1/2 mixture over batter and spread carefully. Top with remaining batter and spread to cover cheese. Bake at 350 degrees for 50-60 minutes. Cool and top with Fudge Frosting.

Fudge Frosting:

1/4 c. milk
1/4 c. margarine
6 oz. pkg. chocolate chips
1 tsp. vanilla
2 1/2 c. sifted powdered sugar

Combine margarine and milk in sauce pan. Bring to boil. Remove from heat, add remaining ingredients, stir to spreading consistency. Spread on top of cake. Put in fridge until set, then take out to room temperature.
